As the spirit vapours rose and travelled through, they carried the roasted fruit with them, drawing pineapple character directly into the distillate. Twice. A single barrel was selected for its balance and depth, reduced to 43% ABV, and finished with a slow-cooked roasted-pineapple maceration that amplifies the fruit already living inside the rum.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\"\u003eThe result is a barrel aged Australian rum of deep golden amber, with copper highlights and a profile that runs from grilled tropical fruit and brûléed pineapple to toffee, vanilla bean and mature molasses.
