THE TROPICAL TEMPTRESS is the most fruit-forward rum Nil Desperandum has ever bottled.
The tropical character comes from a deliberate change to the way we fermented it, drawing out a depth of fruit you'd usually expect from much older spirits. From there, 4.5 years of sub-tropical maturation in a bourbon barrel finished with port. Just before bottling, we added a small parcel of 2021 sugar cane juice rum to brighten the top end.
The result is medium gold in the glass with bright clarity. The nose is lifted and unmistakably tropical, dominated by dried mango, pawpaw and jackfruit, with molasses, maple, cedar and mocha sitting underneath. The palate is rich, soft and juicy. Mango skin and ripe jackfruit lead, with toffee, roasted pine nuts and dried red berries filling in behind. The finish is long and fruit-forward, fading through light caramel into a subtle nutty warmth.
45.6% ABV. 700ml. 101 bottles produced.
