Roasted Pineapple is the inaugural BOND STORE LIMITED EDITION release from Nil Desperandum, distilled on Queensland's Sunshine Coast and aged five years in oak. Just 500 bottles exist.

This is an Australian rum where the fruit isn't an afterthought. It's built into the spirit from the very first distillation.

Fresh pineapples were BBQ-roasted until their sugars caramelised, then placed within the lyne arm of both our copper pot stills, Maria and Sarah. As the spirit vapours rose and travelled through, they carried the roasted fruit with them, drawing pineapple character directly into the distillate. Twice. Not flavoured after the fact, but woven through the spirit itself.

From there, five years in oak. A single barrel was selected for its balance and depth, reduced to 43% ABV, and finished with a slow-cooked roasted-pineapple maceration that amplifies the fruit already living inside the rum.

The result is a barrel aged Australian rum of deep golden amber, with copper highlights and a profile that runs from grilled tropical fruit and brûléed pineapple to toffee, vanilla bean and mature molasses. Crafted from Australian certified organic molasses and Sunshine Coast water, it carries a silky, mouth-coating body that finishes long and warm.

TASTING NOTES

Nose:
Roasted pineapple, grilled tropical fruit and caramelised sugars, lifting into pineapple upside-down cake, warm toffee and honeycomb, with vanilla bean, toasted coconut and a whisper of baking spice.

Palate:
Caramelised pineapple and sticky pineapple conserve layered over mature molasses rum, with crème caramel, vanilla and baked tropical fruit. Rich and beautifully integrated, never sweet for its own sake.

Finish:
Long, warming and persistent. Roasted pineapple, caramelised sugar and soft oak spice, slowly fading.
