Schizosaccharomyces pombe yeast fermented, pot distilled and aged for 2 years and 4 months in an ex bourbon barrel emptied of port. Notes of pineapple, apricots and black bananas. Hints of caramel and lollies. Australian certified organic molasses, pombe yeast, Woombye water. 100% unadulterated.

THE MAGIC OF POMBE YEAST FERMENTATION

Schizosaccharomyces pombe (often called pombe yeast) is a rare yeast strain known for its ability to produce high levels of esters, which contribute to rich, fruity flavours in fermentation. Unlike Saccharomyces cerevisiae (the common brewing and distilling yeast), pombe yeast ferments are noticeably different, resulting in intense tropical and complex aromas.
